What was originally planned as a New Year’s Eve dinner had to be postponed because of the weather. In hindsight, that delay worked in its favour. The evening we experienced felt calm, unforced, and perfectly timed. No countdown. No pressure. Just good food, good pacing, and the kind of atmosphere that lets you actually enjoy where you are and who you are with.
French Cooking Without the Noise
French cooking is often wrapped in formality, but at its core it is about care. Technique matters, but so does restraint. Knowing when to step back. Knowing when to let ingredients speak.
That philosophy came through clearly in every course. Buckwheat galettes that honoured tradition. Scallops cooked properly and left alone. A festive chef’s salad that felt fresh and balanced. A braised bison main that was warm, generous, and deeply comforting, especially on a winter night by the lake.
The opening trio of galette, shrimp with citrus and dill, and duck with cherry set the tone early. Familiar flavours handled with confidence. Dessert closed the meal quietly with chocolate mousse and raspberry. Rich without being heavy. A proper ending rather than a finale.
Nothing felt rushed. Nothing felt fussy. This was food cooked by people who understand the craft and respect the table.
The People Behind the Plates
Seeing Gilles and Melissa in the room mattered. This is not a concept dropped into a hotel dining space. It is an extension of work they have been building for years.
What started at farmers’ markets grew into a café that became part of the rhythm of Owen Sound. That same care now lives here in Sauble Beach. You feel it in the pacing of the meal, in the confidence of the menu, and in the way the evening unfolds without needing to announce itself.
The Space
Winter at Sauble Beach has a quieter beauty. Inside The Sands, the dining room felt warm and intentional. Candlelight, simple details, and a room that encouraged people to linger. Refined without formality. Comfortable without trying to be casual.
It was the kind of space that lets food do what it is meant to do.
Looking Ahead
This opening feels like a beginning rather than a moment.
As the seasons shift, Café Gilou’s presence at The Sands will naturally evolve with them. Summer brings the promise of rooftop evenings where the pace slows, the light stretches long across the lake, and dinner unfolds against a backdrop of open sky and water. Sunset at Sauble Beach is never a small thing, and the idea of pairing that moment with thoughtful French cooking feels especially right.
We are looking forward to fresh lobster served simply, accompanied by crisp wine, warm air, and the quiet luxury of not needing much more than what is already in front of you. Food that suits the setting. Evenings shaped as much by atmosphere as by the plate.
Downstairs, the ground level patio will offer a more relaxed counterpoint. Casual lunches, shared plates, and a rhythm that matches beach days rather than the clock. Two experiences, distinct in tone but connected by the same philosophy of care and restraint.
As the weather turns again, Café Gilou will continue to offer private dining for small groups, creating space for gatherings that feel intentional and unhurried.
Café Gilou does not feel like something added to Sauble Beach. It feels like something that has found its place.
